Khakhra from Indu Ben
Khakhra is basically a thin cracker local to the state of Gujarat. It’s crunchy, salty and quite delicious. Wheat flour, little oil, salt, dried fenugreek leaves and water is mixed into a smooth dough. The dough is rolled out very thinly and then cooked on a very low flame. The cooking process requires a little effort as you have to keep pressing it (with a spoon or piece of cloth) to make sure that no bubbles are formed. Cool it down and have it plain with tea. It also tastes great with curd and chutney powder. Many eateries serve khakhra in Ahmedabad, but you must try khakhra from Indu Ben’s stall. They are the best!
