Ingredients:
- Quinoa - 1 cup
- Cucumber - 1, diced
- Tomato - 1, diced
- Onion - 1, finely chopped
- Coriander leaves - 2 tbsp, chopped
- Lemon juice - 1 tbsp
- Olive oil - 1 tsp
- Salt and pepper to taste
Method:
- Cook quinoa in water and let it cool.
- Mix the vegetables, coriander, olive oil, lemon juice, salt, and pepper with quinoa.
- Serve chilled.
